Blueberry Cobbler


Blueberry Cobbler
Adapted from Ree Drummond, PW
You will need:
  • 1 stick Butter (Melted)
  • 1-¼ cup Sugar
  • 1 cup Self-Rising Flour
  • 1 cup Milk
  • 2 cups Blueberries,
  • or blackberries, raspberries....etc. (frozen Or Fresh)


1. Preheat the oven to 350F.
2. Butter a medium sized baking dish. I used a pie dish.
3. Cut the remaining butter into smaller pieces and put into a microwave safe bowl. Melt the butter. About 45 seconds in the microwave.
4. In the meantime... Pour 1 cup of sugar and flour into a mixing bowl. Then pour in the milk and whisk it well until all mixed. You don't need to overbeat it, just incorporate....

5. Now, add that melted butter into the batter and also whisk it in completely.


6. Rinse and pat dry your blueberries or whatever other berries you are using.
I rinse them and then lay them down on a paper towel and lay another paper towel on top and gently press to soak up the water.
7. Pour the batter into the buttered baking dish.
8. Sprinkle blueberries over the top of the batter; distributing evenly.
9. Sprinkle almost ¼ cup sugar over the top... (leave about 1-2 tablespoons).
10. Bake in the preheated oven for about 50 minutes.
11. When about 50 minutes have passed, take the cobbler out of the oven and sprinkle the remaining 1-2 tablespoons sugar on top. Stick back in the oven for about 10 minutes.
.... and of course enjoy!!! It is best served warm (but I have reheated it also). Serve it with ice cream or whipped cream to jazz it up a bit. Or leave it plain!

  2. Anya???? Lol... yeah. I will start posting healthy recipes when I start eating healthy... and with 5 lbs of butter in my fridge that aint bound to happen soon. :) Hey this has blueberries and they are good for you.
