Here is what you will need:
2 pkg. (8oz.) cream cheese, softened to room temperature
3/4 cup sugar
3 eggs
1 Tbsp vanilla
1 Tbsp lemon juice
48 vanilla wafers (about 1/2 box)
2″ aluminum mini baking cups
Cherry Pie Filling
1. Mix the eggs, softened cream cheese, vanilla, sugar and lemon juice with an electric stand or hand-held mixer. (For about 3 minutes on Med. speed)
.... At this point you can also preheat your oven to 350F.......
2. Place all the baking cups onto a baking sheet. Since these are aluminum they do NOT need special muffin pans as they are strong enough too stand on their own. Put one wafer upside-down in each baking cup. (This is where the 2' cups are important! If you got the regular 2 1/2' cups, they will be too big for the wafer.)
4. Bake at 350F for 15-20 minutes.
5. Let cool
6. Add about a teaspoon of cherry pie filling on the top of each cheesecake.
These were delicious! I'm lucky to visit Alla quite frequently and she always has some delicious treat to share. This was the last I tried and I wish I had some now!
