Adapted from: Jill Dupleix

Here is what you will need:
  • 12 whole New Potatoes (or Other Small Round Potatoes) (I just used 5 large ones, that's what I had)
  • 3 Tablespoons Olive Oil
  • Kosher Salt To Taste
  • Black Pepper To Taste

1. Fill up a pot of water. Add your potatoes

2. Bring it to a boil and add some salt. Let cook about 20 minutes or until fork-tender.
3. Drizzle some olive oil on a baking sheet. Put the potatoes on top.

4. Now with a hand-masher or the bottom of a glass GENTLY press down and rotate your hand a little. Try not to over-smash them.

5. Add salt and pepper to taste. Potatoes NEED alot of salt, so don't skimp out!

6. Now... brush the tops and sides of the potatoes with olive oil.
7. Bake at 450F for 20-25 minutes.

7. Serve with ANYTHING :) AND ENJOY!
